ITALIAN RAINBOW COOKIES, TRADITIONAL 

The cookie that started it all for Tremonte’s. A labor of love to make, this cookie is really more of a mini cake.  Made with layers of Tremonte’s signature almond cake, apricot jam between the layers, and coated in dark chocolate.  The cake layers are made in the colors of the Italian flag , red, white and green.

INGREDIENTS: Butter (cream, natural flavor), apricot jam (apricots, sugar, fruit pectin, ascorbic acid, citric acid), enriched wheat flour (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, enzymes, folic acid), bittersweet chocolate (cocoa beans, sugar, cocoa butter, sunflower lecithin, vanilla extract), eggs, almond paste (almonds, sugar, water, natural flavor, potassium sorbate), sugar, salt, clear vanilla flavor (water, alcohol, vanillin, other artificial flavors, citric acid), almond extract (water, alcohol, bitter almond oil), gel food color (water, sugar, Red 40, Red 3, Yellow 5, Yellow 6, Blue 1, modified corn starch, vegetable gum, citric acid, sodium benzoate, potassium sorbate)
